Cranberry Honey Glazed Carrots

Yield: 4 servings

A simple, yet delicious, side dish to accompany many different entrees from grilled salmon to roasted turkey. The cranberry honey puts a sweet tart edge on the taste and flavor profile. With the addition of a pinch of cayenne Honey Glazed Carrotspepper, this simple carrot dish will take your palate on a ride! I hope you enjoy!

Ingredients:

2 cups carrots, peeled and cut into 1/4 inch coins

2 Tablespoons of butter, unsalted

3 Tablespoons Cranberry Creamed Honey

1/8th teaspoon cayenne pepper (optional if you do not like heat)

Salt & Black Pepper to tasteĀ 

Preparation:

1- In a saucepan, heat and melt butter over medium heat.

2- Add the carrots and place a lid on the sauce pan. Let cook for 5 minutes, stirring once or twice within that time.

3- After 5 minutes, take the lid off and add the cranberry creamed honey and cayenne pepper. Turn the heat up and cook until tender.

4- Season with salt and pepper

5- Serve hot and enjoy. Consider garnishing with sliced chives or green onions.

Chef’s Note: If you would like, you can blanch and shock the carrots in hot water or microwave to par cook the carrots.
